Simple Saucy Chicken and Rice Recipe

A while back I used to make cooking videos trying to follow recipes in Kraft's 'What's Cooking' magazine. The one recipe I remember by heart, to this day, is this saucy chicken and rice recipe. It takes about 30 minutes to make and is very simple to throw together.

Ingredients for one person (I'm lonely, okay): 
Bacon (for topping, so I only need one to two strips usually)
1/2 of a medium onion
1 Boneless skinless chicken breast cut into bite-sized cubes
1 carrot, cut into small pieces
1/3 of a cup of chicken broth
2 heaping tbsp of cream cheese
Rice (as much as you like for one serving)

Step 1: Cook bacon as you normally would, drain fat and set aside.


Step 2: Fry diced chicken bites until almost cooked through, then remove and set aside.


Step 3: Fry up half of a medium onion, diced small (I screwed up and forgot and did it in a separate pot but you should do it in the same pan!).


Step 4: Add the chicken broth and carrots to the onions, put the lid on and let simmer on medium heat for 10-15 minutes, until tender enough a fork can stab through.


Step 5: Once carrots are tender add two heaping tablespoons of cream cheese (obviously less than pictures) and stir in to mix with the broth and create the sauce.


Step 6: Add chicken and finish cooking through and let sauce reduce. At this point I usually cook my rice because it's minute rice.


Step 7: Plate on a bed of rice, roughly chop bacon and crumble overtop.
